Product Developer / Food Scientist
Location: Greater Salem, OR Area (On-Site)
Compensation:
$80,000 - $90,000 base salary + performance bonus
Travel: Up to 25%
Company Overview
A leading manufacturer of premium bakery and dessert products is seeking a Product Developer / Food Scientist to join its Research & Development team. This senior-level individual contributor will lead new product development projects from concept through commercialization, partnering closely with Operations, Quality, Sales, and Supply Chain teams. This role is ideal for a food scientist with a passion for bakery, pastry, and dessert innovation.
Key Responsibilities
Lead end-to-end product development, including formulation, benchtop development, plant trials, commercialization, and ongoing product optimization.
Drive scale-up and first production runs, troubleshooting formulation and process challenges to ensure successful commercialization.
Manage product specifications, ingredient qualifications, labeling compliance, shelf-life validation, and cost targets throughout the development process.
Qualifications
Bachelor's degree in Food Science, Food Technology, Culinary Science, or related field; equivalent pastry and commercial formulation experience will also be considered.
Minimum 3 years of product development or R&D experience within food manufacturing; bakery, pastry, frozen foods, or dessert experience preferred.
Proven success taking products from concept to commercial production, with working knowledge of labeling regulations, ingredient functionality, food safety systems, and product costing.
